3 Smoked Salmon Recipes for Mother’s Day

There is no better way to say ‘I love you’ this Mother’s Day than by serving your loved one a delicious home cooked meal. We’ve put together some of our favourite recipes we like to make with our very own smoked salmon. These recipes are simple but it’s our smoked salmon that makes them taste extra special!

Smoked Salmon with Scrambled Egg and Sourdough

There is only one thing for breakfast in bed and that is smoked salmon with scrambled eggs and sourdough.

Serves 2

Ingredients

Method

  • Slice the sourdough and toast.
  • In a small saucepan, melt a little bit of butter over moderate heat until it’s foaming.
  • Crack the eggs into a bowl and whisk. Some people like to add a dash of milk at this stage, but this is optional.
  • Add the eggs to the saucepan and let it sit without stirring for around 20 seconds. With a spatula stir and break up the egg to help it ‘scramble’, this should only take around 5 minutes.
  • Place the smoked salmon on top of the sourdough then pour the scrambled eggs on top.
  • Pour the scrambled eggs over the slices of sourdough then drape the salmon on top.

Smoked Salmon Bruschetta

Smoked salmon bruschetta is a simple twist on a classic – the ideal starter.

Method

  • Dice the smoked salmon, tomatoes and onion and finely chop the rocket before combining them together with salt, pepper and a little bit of olive oil.
  • Slide and toast the baguette then rub with garlic.
  • Top the slices with the mixture and drizzle some balsamic vinegar over the top and a little bit more olive oil if you wish.

Creamy smoked salmon and lemon pasta

Now for the main course...

Serves 2

Ingredients

  • Falls of Dochart Smokehouse Cold Smoked Salmon
  • 175g of Tagliatelle or other pasta of your choice
  • 1 sliced garlic clove
  • 3 tbsp crème fraîche
  • Half a lemon
  • 2 tbsp grated parmesan
  • 25g fresh shives or dill finely chopped
  • 50g rocket

Method

  • Bring a pan of salted water to the boil and cook tagliatelle.
  • While the pasta is cooking, heat oil in a frying pan over a medium heat and add garlic. Fry for around 2 minutes.
  • Stir in the crème fraîche, lemon juice, parmesan and a little bit of water and allow it to bubble for 1 minute.
  • Drain the pasta and mix in with the sauce. Cook for a further 2 minutes or until reduced to a creamy texture.
  • Stir through the strips of smoked salmon and chives or dill and season with black pepper. Garnish with a handful of rocket.
